Ingredients for 4 servings

Leftovers of half a roast chicken, shredded

1 litre/2 pints of homemade chicken stock

2 x 400g tins sweetcorn

1 tablespoon of sunflower oil

1 large thumb-sized piece of ginger, finely chopped

2 garlic cloves, finely chopped

1 tablespoon of soy sauce

1 tablespoon of rice wine vinegar

1 teaspoon of sesame oil

2 eggs lightly beaten

4 spring onions, finely sliced, diagonally
