2 cup fresh or frozen mixed seafood

8 x medjool dates, pitted and chopped

2 x oranges, peeled, and segments cut into pieces

1 small red onion, thinly sliced

1 cup arugula or rocket leaves

2 tbsp olive oil

1 tbsp red-wine vinegar

salt and pepper

1 cup chicken or vegetable stock

1/3 cup honey

1/2 tsp hot chile powder

1/4 tsp ground cumin

1/4 tsp ground coriander

1 tsp red-wine vinegar

1 cup heavy or double cream

2 tbsp buttermilk
