Ingredients

1 3/4 cup white rice flour (extra finely ground)

1/2 cup potato starch (not potato flour)

1/4 cup tapioca flour

1 cup neutral tasting oil

1/2 tsp salt

1 tbsp baking powder

1 tsp xanthan gum (make sure it gluten free)

1 cup buttermilk

2 cup white sugar

4 large eggs

2/3 cup water

6 x egg whites

a generous pinch salt

1/4 tsp cream of tartar

1 1/4 lb unsalted butter at room temperature

1 1/2 tsp vanilla

3 tbsp Grand Marnier Cointreau, or some other flavored liqueur of your choice (this is optional)
