Ingredients

5 pounds (2 medium) butternut squash

2 medium onions, quartered

1/2 head garlic, separated into cloves (do not peel)

2 tablespoons olive oil

2 teaspoons ground cumin

2 teaspoons coarse salt

1/2 teaspoon pepper

1 small bunch fresh sage (about 6 stems)

6 cups chicken broth, store-bought or homemade

2 teaspoons red wine vinegar or lemon juice

MAPLE PEPITAS:

2 cups hulled pumpkin seeds (pepitas)

2 tablespoons maple syrup

1 1/2 teaspoons coarse salt

1/2 teaspoon paprika or cayenne pepper
