2 medium golden beets, washed

4 tbsp olive oil

Kosher salt

Freshly ground black pepper

3/4 cup whole almonds

2 cup dry orecchiette pasta

1 cup thinly sliced radicchio

1/2 cup thinly sliced fennel bulb

1/4 cup chopped fennel fronds

1/2 cup sliced scallions

1/4 cup chopped fresh Italian parsley

1/3 cup Lemon Vinaigrette (recipe follows)

1 tbsp. Dijon mustard

2 tsp. red wine vinegar

1/3 cup freshly squeezed lemon juice

1 tsp. honey

1 tbsp. freshly grated lemon zest

1 garlic clove, finely chopped or pressed

1 tsp. kosher salt

½ tsp. freshly ground pepper

¾ cup olive oil
