1/3 cup strained fresh orange juice

Juice of 1 lemon

Juice of 1 lime

1 teaspoon sea salt or kosher salt

2 tablespoons pureed chipotle en adobo

1 1/2 tablespoons honey

2 tablespoons olive oil, or as needed

1 cup diced sweet onion

2 poblano chiles, seeded, deribbed and cut into strips (do not char)

1/2 red bell pepper, diced

3/4 cup drained canned black beans (optional)

3 tablespoons canola oil

6 flour tortillas

3/4 to 1 cup grated cheese of choice
