Ingredients

1 package Shirataki Angel Hair or Fettucine Tofu Noodles

kosher salt to taste

1 c peeled raw shrimp, roughly chopped (if using frozen, rinse thoroughly and defrost)

2 t garlic, minced

1/4 c artichoke hearts, jarred and packed in oil, sliced

1 pint grape or small cherry tomatoes

2 T black olives, sliced

1 handful fresh basil, sliced in chiffonade

1 handful fresh spinach

1 t fresh lemon juice

2 T feta cheese, crumbled

pinch red pepper flakes
