1 tbsp olive oil

1 tbsp butter

1 tsp coriander seeds, crushed

3 x leeks (white part only) sliced

1 x sweet potato, peeled and cut into 1/2-inch dice

1 x parsnip, cut into 1/2-inch dice

2 small purple turnips, cut into 1/2-inch dice

2 x Yukon Gold potatoes peeled and diced

5 cup cold water

1 x bay leaf

7 x fresh sage leaves, chopped

Salt and pepper, to taste

1/2 cup crème fraîche for serving

2 tbsp chopped fresh parsley
