4 cups of strawberries (approximately 2 lbs) divided into 2 c and 2 c, washed and quartered if large, halved if small, whole if wild

1/3 cup of sugar

1/3 cup coarsely chopped crystallized ginger

1 tsp ground ginger

1 TB cornstarch

1 TB butter
