  • 2 1/4 lbs Yukon gold or red potatoes, thinly sliced (about 6 cups)
  • 3/4 cup egg substitute
  • 1/2 cup chopped onion
  • 1 Tbsp chopped fresh dill
  • 3/4 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 5 large eggs, lightly beaten
  • 2/3 cup (about 4 ozs) chopped smoked salmon
  • 1 1/2 Tbsps olive oil
  • 1/2 cup light sour cream
  • Chopped fresh dill (optional)
