1 1/4 pounds chicken breasts and thighs

1 1/2 cups medium-dice mirepoix (mixed carrot, celery, onion)

1 1/2 cups quick-cooking white grits

3 cups water

1 tablespoon butter

3/4 cup fresh corn kernels

1/2 cup chopped red onion

2 tablespoons fresh goat cheese

3/4 cup thinly sliced green onions

Salt and freshly ground pepper to taste

3 to 4 tablespoons canola oil or butter

Flour or panko breadcrumbs, for coating

Sauce

2 1/2 tablespoons minced shallots

1 1/2 teaspoons minced garlic

1/2 teaspoon fresh thyme leaves

1 cup unsalted chicken stock

1/3 cup mascarpone cheese

2 cups small cherry tomatoes, halved

1 teaspoon kosher salt, or to taste

1/4 teaspoon freshly ground pepper

1/2 teaspoon vodka

For serving

2 cups arugula leaves

1/4 cup balsamic vinaigrette, bottled or homemade
