1 pkg (14 oz/400 g) parboiled Udon noodles

3 lb whole chicken

1 piece dried seaweed , (kombu), optional

4 tsp Japanese rice

1 tbsp sake

1 tsp salt

1 tsp granulated sugar

1/2 cup ponzu sauce

3 tbsp finely grated daikon radish
