Ingredients for 6 servings

2 ounces prosciutto , chopped

1/4 cup lemon juice

1 teaspoon dried basil leaves

2 (5 ounce) packages saffron yellow rice

1 cup frozen green pea , thawed

1 dash cayenne pepper (or to taste)

1 lb medium shrimp , peeled and cooked

1 (14 ounce) can quartered artichoke hearts , drained

1 cup tomato , chopped (Romas work best)

1 tablespoon olive oil

1 (2 ounce) jar diced pimentos , drained

1/2 chop red onion , chopped

1/4 cup balsamic vinegar

1/8 teaspoon black pepper

3/4 cup green bell pepper , chopped
