  • 3 cups apple cider , as needed
  • 1 1/2 tsps dried rosemary or 1 Tbsp fresh rosemary
  • 6 garlic cloves , thinly sliced
  • fresh ground black pepper
  • 2 Tbsps vegetable oil
  • 3 large onions , halved lenghtwise, thinly sliced into half moons
  • 1 (6 lb) beef brisket , whole, outer fat trimmed
  • 1 1/2 tsps dried thyme or 1 Tbsp fresh thyme
  • kosher salt
  • 1/2 cup molasses , unsulfured
