1 medium-large onion, diced

3 medium carrots, thinly sliced

1/4 teaspoon crystal salt

1 large tomato, diced

1-2 jalapenos, deseeded if desired, and minced (more or less to taste)

2 large cloves garlic, minced

1/2-inch piece fresh ginger, grated

1 1/2 teaspoons Garam Masala Spice Mix, divided

1/2 teaspoon ground coriander

1/4 teaspoon black pepper

1/8 teaspoon cinnamon

1 bay leaf

1 vegetable (or chicken) flavored soft bouillon cube

1 cup pumpkin puree

2 cups water

1 (15 oz) can garbanzo beans (chickpeas), rinsed and drained

1/4 cup coconut milk

Fresh lemon wedges (optional; for serving)
