2/3 cup onion, thinly sliced in half rings

5 cloves garlic, coarsely chopped

2 tablespoons fresh ginger, grated fine

2 teaspoons red curry paste, or more if you like it hot

1 tablespoon Sriracha sauce

2 13.5 oz cans light coconut milk

5 cups chicken stock

2 teaspoons sugar

2 tablespoons Nam Pla (Fish Sauce available in the ethnic food aisle)

2 medium yams, peeled and cut into cubes

2 cups broccoli, cut into bite sized pieces

6 oz Thai Rice Stick noodles

3 chicken breasts, boneless & skinless, sliced into thin strips

2 tablespoons fresh lime juice, plus a few wedges for garnish

1/3 cup cilantro, coarsely chopped
