1 1/2 cups (6 1/4 ounces) unbleached all-purpose flour

1/2 teaspoon table salt

1/2 cup (1 stick, 4 ounces) unsalted butter, cold and cut into 1/2-inch cubes

1/4 cup ice water


2 tablespoons (1 ounce) all-purpose flour

1/2 cup (3 1/2 ounces) sugar (up to 1/4 cup more if apples are very tart or according to taste)

1/4 teaspoon freshly ground nutmeg

1 teaspoon cinnamon

1/2 teaspoon ground ginger

1/16 teaspoon ground cloves

1/4 teaspooon table salt

3/4 teaspoon gingerroot, freshly grated

2 tablespoons candied ginger, finely minced

6 cups apples, peeled, cored, and diced into 1/2" cubes (use firmer, tarter apples like Granny Smith; Honey Crisp also works well; or use a combination of apple varieties)

1 teaspoon vanilla extract

1/3 cup heavy or light cream or milk

Crumble Topping:

3/4 cup (5 1/4 ounces) granulated sugar

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup (1 stick, 4 ounces) unsalted butter, melted
