  • 1/4 cup fresh lime juice
  • 2 Tbsps low-sodium soy sauce
  • 1 Tbsp olive oil
  • 1 Tbsp honey
  • 2 tsps Sriracha (hot chile sauce, such as Huy Fong)
  • 1/2 tsp salt
  • 1 cup uncooked quinoa
  • 2 cups frozen shelled edamame (green soybeans)
  • 1 cup chopped shiitake mushroom caps
  • 1/4 cup chopped red bell pepper
