4 boneless chicken breast halves with skin, tenderloins removed (see Note)

Salt and freshly ground pepper

2 tablespoons unsalted butter

1 tablespoon vegetable oil

1/2 pound cremini mushrooms, sliced 1/8 inch thick

1 large shallot, minced

1/2 cup dry white wine

2 tablespoons Cognac

1 cup heavy cream

1/2 cup chicken stock or canned low-sodium broth

2 tablespoons Dijon mustard

2 tablespoons minced dill
