3/4 cup wild rice

1-1/2 cup extra virgin olive oil

1 bulb fennel , thinly sliced (reserve fronds)

1 leek , thinly sliced

1 medium onion , thinly sliced

1 tsp dried oregano

4 large cloves garlic , minced

1/4 tsp black pepper

3/4 cup fresh parsley

1/2 cup fresh dill

8 cups loosely packed baby spinach , approximately 250 g.

2-1/2 cups feta cheese , crumbled (can be increased to 3 cups)

1 cup walnut halves , toasted

2 large nectarines , or 3 small ones

2 oranges

1 large lemon

2 tbsp fresh mint , finely chopped

2 tsp extra virgin olive oil

1 tbsp cornstarch

3 eggs , room temperature, separated

1 cup chicken stock

1 large lemon , juiced

12 sheets phyllo pastry

3/4 cup butter , melted (or olive oil/butter mix)

8 180 g halibut fillets , about 1 whole halibut

5 heads garlic , roasted

2 tbsp fresh dill , finely chopped

2 tbsp fresh parsley , finely chopped

2 tbsp fresh lemon juice

1 lemon , zested

1 tbsp extra virgin olive oil

2 tsp Dijon mustard

1/4 tsp salt and freshly ground pepper
