8 eggs, separated

1 cup (250 mL) milk

1/4 cup (50 mL) chopped fresh parsley

3 tbsp (45 mL) all-purpose flour

1/4 tsp (1 mL) each salt and pepper

Pinch ground nutmeg

1 cup (250 mL) shredded Canadian Swiss or Gruyere cheese

1/4 cup (50 mL) sliced cooked ham

Oven-Roasted Tomatoes:

4 cups (1 L) cherry tomatoes, halved

2 tbsp (25 mL) extra-virgin olive oil

1 tbsp (15 mL) balsamic vinegar

1/2 tsp (2 mL) each salt and dried basil

Pinch hot pepper flakes
