Ingredients for 4 servings

12 medium shrimp

2 tablespoons plus 1/2 cup olive oil

2 cloves garlic, minced

1 teaspoon coarse salt

1/2 teaspoon freshly ground pepper

1/4 cup freshly squeezed lemon juice

1/2 teaspoon dried oregano

1 head romaine lettuce, washed and cut crosswise into 1-inch strips

1 large tomato, cut into wedges

2 small cucumbers, peeled if waxy, and cut into large chunks

1 small red onion, peeled and thinly sliced

1/4 pound black olives, preferably Kalamata
