4 (3-ounce) skinned, boned chicken thighs

2 cups low-salt chicken broth

1/4 cup dry white wine

3 cups Caramelized Onions (about 8 cups uncooked)

1 cup uncooked long-grain rice

1 tablespoon chopped fresh or 1 teaspoon dried thyme

1/2 teaspoon salt

1 large zucchini, quartered lengthwise and cut into 2-inch slices (about 8 ounces)

4 lemon wedges

Thyme sprigs (optional)
