1 pound meaty white fish bones, such as bones from halibut or sea bass

2 tablespoons extra virgin olive oil

1 medium carrot, peeled, in small dice

1 celery rib, in small dice

1 large leek, white part only, halved lengthwise, rinsed well, in small dice

1 small tomato, in small chunks

1/4 large fennel bulb, in small dice

-- About 1 dozen Italian parsley stems, broken in half

2 to 3 sprigs fresh thyme

-- Kosher or sea salt

1 cup white wine
