3 tablespoons packed dark brown sugar

1/2 teaspoon spicy pimentón

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 large shallot, diced

1 head green cabbage, cored and left whole

3/4 pound dried chorizo sausage, cut into small chunks

2 cups cooked quinoa

2 teaspoons salt

1/4 teaspoon black pepper

vegetable stock, as needed
