Ingredients for 18 servings

1 lb lump crabmeat , picked over for shells & cartilage

2 large egg yolks

1 cup onion , finely chopped

1 cup shredded monterey jack cheese

2 (8 ounce) packages cream cheese , softened

1/2 teaspoon hot pepper sauce, Tabasco

2 tablespoons olive oil

20 ounces spinach , trimmed & chopped or

1/2 teaspoon cayenne

2 1/2 tablespoons fresh lemon juice

1 tablespoon garlic , finely chopped

2 slices bacon , sliced

1 (14 ounce) can artichoke hearts , drained and coarsely chopped

2 (10 ounce) boxes frozen chopped spinach

1/2 tablespoon unsalted butter , softened for baking dish

1 tablespoon spicy whole grain mustard

1/2 teaspoon fresh ground pepper

1 1/4 teaspoons salt

1/2 teaspoon dried tarragon

3/4 cup freshly grated parmigiano-reggiano cheese

1 tablespoon worcestershire sauce

1 cup fine fresh dried breadcrumbs
