  • 1-oz dried porcini mushrooms

  • Pinch ground nutmeg
  • 1 tsp freshly chopped parsley leaves
  • 2 cups dry white wine
  • 12 ozs quinoa
  • 1 tsp sea salt
  • 1 Tbsp chopped garlic
  • Nonstick spray
  • 2 tsps chopped garlic
  • 1 bay leaf
  • 1 Tbsp chopped shallots
  • 1 tsp ground coriander seed
  • 1/2 tsp chopped fresh thyme leaves
  • 1/2 tsp chopped fresh rosemary leaves
  • 5 cups veal stock
  • 4 (5-oz) filet mignon tournedos
  • 8 ozs leeks, white part only, washed in cold water until clean
  • 1/2 tsp salt
  • 20 ozs chicken stock
  • 1/2 tsp cracked black pepper
  • 1 lb wild mushrooms
  • 8 cups vegetable stock
  • 3/4 tsp salt
  • 1 tsp freshly chopped chives
  • 1/2 tsp black pepper
