1 green melon such as Galia

1 Persian cucumber, seeded

1 yellow bell pepper, coarsely chopped

1/2 sweet onion, coarsely chopped

1 yellow or green heirloom tomato, coarsely chopped

1/2 fennel bulb, coarsely chopped

1 1/2 teaspoons sea salt + salt to taste

Juice of 1 lime

Juice of 1/2 lemon + lemon juice to taste

1/2 cup basil leaves

1/4 cup cilantro leaves

Pinch of cayenne

1/2 cup jicama, in 1/4-inch dice

1 teaspoon lemon olive oil (see Note)

6 ounces Maine crabmeat (local crab is fine, too)

4 basil leaves, diced

Micro cilantro, or chopped regular cilantro
