Two 2 1/2 -pound beef tenderloins

2 tablespoons vegetable oil


1 1/2 pounds sugar snap peas

2 pounds fresh lima beans, shelled (about 2 cups)

2 1/2 tablespoons curry powder

4 teaspoons mustard seeds

2/3 cup pure olive oil

6 tablespoons white wine vinegar

3 large garlic cloves, minced

2 teaspoons finely grated lemon zest

1 1/2 teaspoons kosher salt

4 bunches red radishes, quartered

4 cucumbers—peeled, halved lengthwise, seeded and sliced 1 inch thick

1/2 cup snipped chives
