4 center-cut salmon steaks , 3/4-1-inch thick

3 slices lemons , unpeeled and cut into quarters

1 tablespoon snipped fresh dill

fresh dill sprig

1 1/2 tablespoons butter

1/4 teaspoon salt

1 1/2 teaspoons cornstarch

1 dash cayenne pepper (optional)

1/8 teaspoon dried chervil , can sub parsley (optional)

1/2 cup cold water

Lemon-Dill Sauce

1/3 cup fresh lemon juice
