1 carrot, chopped

-- Juice of 1 lemon

2 teaspoons salt

12 peppercorns

1 pound tuna, preferably albacore

1/8 cup pitted Nicoise olives, minced

1/2 cup chopped celery

1/2 cup chopped red onion

1/8 cup capers

-- Zest of 1/2 lemon

1/3 cup mayonnaise

1/8 cup lemon juice

-- Kosher salt and pepper to taste

4-8 slices toasted bread, preferably pain de mie

8 slices white cheddar (about 4 ounces)
