1 tablespoon Five-Flavor Oil (see recipe), or 2 teaspoons Five-Flavor Oil + 1 teaspoon Spicy Citrus Oil (see recipe)

1 yellow onion, diced

2 small leeks (white and light green part only), halved lengthwise, then sliced crosswise into 1/4- inch pieces; or 2 inner ribs celery (with their leaves), cut into

1/4-inch pieces

1 carrot, peeled, halved lengthwise, then sliced crosswise into

1/8-inch pieces

1/3 to 1/2 pound napa cabbage, cut into 1/2-inch ribbons or squares

Approximately 2 teaspoons kosher salt

1/4 to 1/2 teaspoon Roasted Sichuan Pepper-Salt (see recipe)
