These are almost exactly like the ones I used to make at the bakery, soft and fluffy and delicious! You can substitute Maple Extract for the Vanilla Extract in the glaze to make Maple Frosted Pumpkin Cookies - soooo good ;)

Ingredients for 3 servings

2 1/4 cup all-purpose flour

1/2 tsp ground ginger

1/2 tsp ground cloves

1 tsp ground cinnamon

1 tsp baking soda

1 tsp baking powder

1/2 cup butter, softened

1 1/4 cup brown sugar

1 cup pumpkin puree

2 tbsp applesauce

1 x egg

1 tsp vanilla extract
