1 envelope active dry yeast

2 1/2 cup flour, plus more for rolling

1/4 cup sugar, plus 1/2 c for coating

Pinch of salt

2 x eggs, separatd

1 tsp vanilla

1 tbsp lemon zest

2 tbsp unsalted butter at room temperature, cut into pieces

Vegetable oil for frying and for greasing a bowl

1/4 cup raspberry jam
