1 small red onion, finely chopped

1 can (15 ounces) petite diced tomatoes with basil and oregano

2 tablespoons red wine vinegar

2 teaspoons grated fresh ginger

1 teaspoon smoked paprika

2 teaspoons chopped fresh mint

3 cups green beans, steamed

6 tablespoons toasted sliced almonds

2 cups cooked brown rice
