700.0g pink rhubarb , trimmed and cut into thumb-length pieces

284 ml and 142ml pots double cream

1.0 tbsp ginger wine

1.0 tsp ground ginger

approx 300g ginger cake (shop bought), thickly sliced

600.0ml pot ready-made vanilla custard

85.0g coarse oatmeal

2 balls ginger in syrup, 1 chopped, 1 slivered

100.0g golden caster sugar
