10 Ingredients

  • 2 strips thick-cut bacon, cut into small pieces
  • 1/2 x sweet onion, diced
  • 8-10 x cloves roasted garlic (or 3 cloves of fresh garlic), chopped
  • 1 can green chilis (4 oz)
  • 1 can Northern beans (15 oz)
  • 1 x chicken breast, cooked & shredded
  • 4 cup chicken broth
  • 1/2 cup sour cream
  • 1/3 cup white corn
  • 1/4 cup manchego cheese (or monterey jack), grated

Really good and quick! Added a little chipotle chili powder and fresh cilantro. Definitely a keeper!

This tastes great without sour cream and cheese, for those with dairy issues. I used a little bit of almond milk or coconut milk to make it a bit creamy.

Definitely makes a very soupy chili but tastes delicious! Next time I'm going to try 3 cups broth and also draining the beans.

This was very good! I substituted Greek yogurt for the sour cream and added a little cayenne and chili powder. Would make again but next time I will be adding more beans. Great recipe!
