1 ounce dried porcini mushrooms

1 large onion , thinly sliced

1 medium celery , finely chopped

1 cup boiling water

2 tablespoons unsalted butter

1/3 cup tomato paste

1/4 lb dry coppa, cut into1/4 inch dice

2 tablespoons olive oil

4 medium garlic cloves , minced

2 (28 ounce) cans Italian plum tomatoes , drained

1 lb polenta , about 3 cups


3 medium leeks , finely chopped (white part only)

2 teaspoons minced fresh oregano , crumbled crumbled or 1/2 teaspoon dried oregano , crumbled

4 lbs chicken legs with thigh

3/4 cup italian dry red wine (such as Chaianti)

2 lbs sweet Italian sausage (8)

1/2 teaspoon salt (to taste)

2 quarts chicken stock
