3 tablespoons granulated or powdered onion

12 heads garlic, peeled, each head halved

12 gallons water

2 cups cayenne pepper

6 cups Creole Seafood Seasoning, recipe follows, or any Creole seasoning mix

1 tablespoons dried thyme

1 (40 to 45 pound) sack live crawfish

1 tablespoons dried oregano

15 bay leaves

1/4 cup fresh ground black pepper

8 cups salt

1/3 cup table salt

2 tablespoons cayenne pepper, or to taste

2 cups whole black peppercorns

2 tablespoons dried basil

12 lemons, halved

3 pounds small new potatoes, scrubbed, skin on
