I was thinking last night about this cake and I really prefer a smaller crumb. This one sort of reminds me of a corn muffin. So looked at recipe I had made a few months ago. It's more dense and there were a few differences. 3 cups of flour, 6 eggs, and 2 1/2 cups of sugar. And it added 1/3 cup of citrus juice in addition to the zest. The rest of the recipe is very much the same. Just thought I'd share my thoughts.

Ingredients for 12 servings

1 cup unsalted butter , softened

1 1/2 cups granulated sugar

zest of 3 medium limes

2 teaspoons vanilla

2 eggs

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 cup Green Valley Organics Sour Cream

1/2 cup sweetened flaked coconut
