One 12-pound fresh turkey, rinsed and dried, neck and giblets reserved

1/2 cup dry white wine

About 2 1/2 cups chicken stock

3 cups water

1/4 cup Madeira

2 teaspoons cornstarch mixed with 1 tablespoon water
