1 pound pitted dates

2 cups sugar

10 cups water

2 pounds baking potatoes, like russets

1/2 cup ghee or clarified butter

1/2 cup diced onion

2 tablespoons minced garlic

2 tablespoons minced jalapeno

1 tablespoon minced ginger
