2 x fennel bulbs

1 tbsp olive oil

2 tbsp butter

1 x onion, thinly sliced

6 cup arborio rice

6 cup vegetable stock

Grated zest and juice of 1 lemon

Salt and freshly ground black pepper

Black pepper to taste

2 oz Parmesan cheese, freshly grated

8 oz Brie cheese, rind removed and cut into 1/2 inch pieces

Flour

3 x eggs, beaten

Breadcrumbs

Olive oil, for shallow frying

Fresh fennel tops for garnish
