Ingredients for 4 servings

1 cup heavy cream

1 chipotle pepper in adobo sauce, minced to a paste

Zest and juice of 1 lime, divided

3 tablespoons extra virgin olive oil (EVOO)

8 slices bacon

1 red onion, finely chopped

2 tablespoons Worcestershire sauce (eyeball it)

3 tablespoons dark brown sugar

1 can tomato sauce (15 ounces)

4 ears of corn on the cob, husked

Salt and black pepper

2 pounds ground sirloin

1 tablespoon cumin (a palmful)

1 tablespoon chili powder (a palmful)

2 tablespoons steak seasoning, such as McCormick brand Montreal Steak Seasoning (a couple of palmfuls)

2 teaspoons ground coriander (2/3 palmful)

2 cloves garlic, grated or finely chopped

4 Kaiser rolls, split and toasted

1 pound spinach, stemmed

1/2 pound queso fresco, asadero cheese or other white, mild cheese, grated

2 scallions, whites and greens, finely chopped

A handful of cilantro or flat leaf parsley leaves, finely chopped
