Instead of mirin, I used sesame oil and it was fantastic! I even skipped the marinating overnight portion because I needed to eat right away and it was still flavorful.

Very easy and taste really good. Made chicken bowls, brown rice, streamed veggies and some diced green onion. My wife loved it! Would do again.

Ingredients for 6 servings

1/2 cup (125ml) mirin

1/2 cup (125ml) soy sauce

One 2-inch (5cm) piece of fresh ginger, peeled and grated

2-pounds (900g) boneless chicken thighs (4-8 thighs, depending on size)
