1/2 teaspoon crushed red-pepper flakes

1 pound boneless, skinless chicken breasts, cut into twenty-four 1" chunks

16 dried apricot halves

1 medium red bell pepper, cut into 12 squares

1 medium sweet white onion, cut into 12 squares

3/4 cup quick-cooking brown rice (cooks in 10 minutes), such as Uncle Ben's

2 tablespoons chopped parsley or snipped fresh chives

4 pineapple slices
