4 x baby plum tomatoes/cherry tomatoes, quartered

some x red onion, sliced finely

3 x buffalo mozarella bocconicini

some x flat leat parsley

3 tbsp Dressing: roasted tomatoes or the equivalent in small juicy ones

1 glug Extra Virgin Olive Oil

1 handul flat leaf parsley

1 tsp pomegranate molasses

1 pinch dried chilli flakes

1 pinch Sumac

1 to taste salt and pepper
