Ingredients

6 tablespoons (3/4 stick) unsalted butter or bacon drippings, plus more for the baking dish

1/4 medium onion, minced (1/4 cup)

1 rib celery, cut into small dice (1/2 cup)

1 cup coarsely chopped mushrooms

1/2 medium green bell pepper (seeded), cut into small dice (1/2 cup)

1 pound lump or backfin crabmeat, fresh or pasteurized, picked free of shells and cartilage

8 slices white bread (crusts removed), cut into cubes (about 4 cups)

4 large eggs, lightly beaten

2 cups regular or low-fat milk

2 cups heavy cream

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon Worcestershire sauce

Dash hot pepper sauce, such as Tabasco

1 cup finely shredded sharp cheddar cheese
