1 large onion, diced

3 cloves garlic, minced

1 pound ground lamb

1 pound ground pork

1/2 cup ricotta cheese

1/2 cup mascarpone cheese

2 cups marinara sauce

1 pound penne pasta, cooked al dente and drained

salt and pepper, to taste

1 tablespoon dried mint flakes (or 1/4 cup fresh, minced)
