17 Ingredients

  • 1 1/4 cups lukewarm water
  • 2 tsps instant yeast
  • 1 Tbsp Pizza Dough Flavor
  • 1 1/4 tsps salt
  • 2 Tbsps olive oil
  • 3 cups King Arthur Unbleached All-Purpose Flour
  • 1/2 cup Hi-maize Natural Fiber
  • 2 Tbsps garlic oil
  • 1/4 cup olive oil
  • 4 thick slices (about 10 ozs) of the bread above, or the sturdy bread of your choice
  • 3 Tbsps balsamic vinegar or lemon juice
  • 8 ripe medium-sized tomatoes (3 lbs), diced
  • 1 cup diced red onion
  • 2 cups diced fresh mozzarella cheese (smoked is nice), in 1/4" cubes
  • 10 fresh basil leaves, minced
  • 1 cup pitted Kalamata olives (or your favorite olives), chopped
  • 2 to 3 tsps Pizza Seasoning; or salt and freshly ground pepper to taste
